Step-by-step process to Make Homemade Qdoba Tortilla Soup

  1. Heat Olive Oil:
    • Warm olive oil (or other vegetable oil) in a large soup pot over medium heat.
  2. Sauté Vegetables:
    • Sauté onion, garlic, and poblano pepper until softened. This builds the foundational flavors of the soup.
  3. Add Spices:
    • Incorporate cumin, chili powder, salt, and pepper. Sautéing these spices briefly enhances their aroma and flavor.
  4. Pour in Soup Broth:
    • Add the soup broth and let it warm. This step allows the broth to absorb the flavors of the sautéed vegetables and spices.
  5. Include Tortilla Strips and Tomatoes:
    • Introduce the tortilla strips and both types of tomatoes. This forms the body and texture of the soup.
  6. Simmer:
    • Reduce to medium-low heat, cover, and let the soup simmer. Simmering allows the flavors to meld and intensify. Stir periodically as the soup simmers.
  7. Add Protein (Black Beans for Vegetarian Soup, chicken or various additional protein can be used):
    • Introduce shredded chicken, black beans, or other protein. This step enhances the soup's heartiness.
  8. Final Simmer:
    • Allow the soup to simmer with the protein for a few more minutes, ensuring all components are well-incorporated.
  9. Garnish:
    • Finish the soup by garnishing with shredded cheese, fresh cilantro, crushed corn chips, avocado, a dollop of sour cream, or a lime slice and a squeeze of lime juice. This adds visual appeal and additional flavors. See below for an extensive list of garnish ideas to load your soup up!

How to Store Leftover Tortilla Soup

Here's a guide on how to store Qdoba Tortilla Soup:

Refrigeration

  1. Cool the Soup:
    • Allow the soup to cool to room temperature before refrigerating.
  2. Divide into Portions:
    • Consider dividing the soup into smaller portions. This allows for quicker cooling and easier reheating of individual servings.
  3. Airtight Containers:
    • Transfer the soup into airtight containers. This helps preserve flavors and prevents the absorption of odors from the refrigerator.
  4. Labeling:
    • Label the containers with the date of preparation. This ensures you keep track of how long the soup has been stored.
  5. Refrigerator Shelf Placement:
    • Store the containers on a refrigerator shelf, not in the door. The door experiences temperature fluctuations, and placing food there can affect its quality.
  6. Consume Within 3-4 Days:
    • For optimal quality, consume the refrigerated tortilla soup within 3-4 days.

Freezing

  1. Cool Completely:
    • Allow the soup to cool completely before freezing. Hot foods can raise the freezer's temperature and affect other items.
  2. Choose Freezer-Safe Containers:
    • Opt for containers or freezer bags specifically designed for freezing. Leave some space for expansion to prevent containers from cracking.
  3. Remove Excess Air:
    • If using bags, remove as much air as possible before sealing. This minimizes the risk of freezer burn.
  4. Labeling:
    • Label the containers or bags with the date. Frozen tortilla soup is best consumed within 2-3 months for optimal quality.
  5. Thawing:
    • Thaw the frozen soup in the refrigerator overnight for gradual thawing. Reheating from frozen may result in uneven warming.

Reheating

  1. Stovetop or Microwave:
    • Reheat refrigerated or thawed soup on the stovetop over medium heat or in the microwave. Stir occasionally to ensure even warming.
  2. Add Fresh Toppings:
    • Consider adding fresh toppings, such as chopped cilantro, avocado, or a squeeze of lime, to enhance the flavors before serving.

By following these storage and reheating guidelines, you can enjoy your Qdoba Tortilla Soup with maximum flavor and safety.
