How to make this Costco Fire Roasted Vegetables Recipe
- Preheat the oven: Preheat your oven to 400°F (200°C).
- Toss ingredients: In a large bowl, toss together the Pura Vida Fire Roasted Vegetable Melange, gnocchi, olive oil, garlic powder, salt, and pepper until everything is evenly coated. This ensures that the flavors are distributed evenly throughout the dish. Remember that the Vegetable Melange already has seasoning and olive oil, which will tranfer to the gnocchi when baking.
- Spread on a sheet pan: Transfer the tossed ingredients onto a large sheet pan, spreading them out in an even layer. This allows for even cooking and browning.
- Bake: Place the sheet pan in the preheated oven and bake for about 30 minutes. For best results, toss the mixture every 10 minutes to ensure even cooking and browning.
- Add spinach: Once the mixture is cooked and nicely browned, remove the sheet pan from the oven. Add the fresh spinach leaves to the mixture on the sheet pan. The residual heat will wilt the spinach leaves without overcooking them. Using a spatula or spoon, gently stir the mixture on the sheet pan until the spinach leaves are evenly distributed and wilted. Alternatively, you can put the ingredients back into a bowl and stir wilt the leaves.
- Serve: Transfer the cooked mixture serving bowls. Optionally, sprinkle with grated parmesan cheese for added flavor.
